Bikini Recipe

Serves 10 servings

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Put all the components in a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, take off the burner allowing it to cool entirely. Transfer into a clean bottle, cap it keeping it in the refrigerator, where it will keep for about a month.

For the Premix: Combine all the liquid ingredients into one big jug, let it rest for an hour, then strain best through muslin, to ensure it's completely strained.

To serve: Pour 85ml from the cocktail base to a stirring glass packed with ice, and stir lightly for one minute to chill. Strain into an chilled martini glass or equivalent, garnish with some cranberries adding the final touch by giving it a light spray with the mandarin essence over the top.
